I keep finding myself out of flour these days! Probably because we are in the midst of a global pandemic, there is a flour shortage, and all I want to do is bake things. The other day I was making pancakes and then cookies and thought ... "Hey... I can make some flour myself!" Now, I still generally mix this with other flours (buckwheat, rice, potato, gluten-free flour mix, etc) to create more of a blend, but it definitely works to stretch out your flour stock if you need to!
There isn't much to this gluten-free flour recipe:
Just blend 2 cups of oats with a pinch of salt until super fine and then also 2 cups of almonds with a pinch of salt - pulsing so it doesn't turn to almond butter - and mix!
